On board at Café Imports since July of 2006, Amanda Eastwood is a recent college graduate of the University of Minnesota where she studied Spanish and Global Studies focusing on the Governance, Peace and Justice of Latin America. Prior to Café Imports, Amanda worked in the insurance industry. With her adventurous spirit, passion for people, and her ongoing pursuit of living life to the fullest, she often chooses to venture beyond the beaten path when the opportunity presents itself. The joy of experiencing and learning about new cultures, peoples, languages, and lifestyles is an addiction that Amanda has acquired on her various international jaunts.

After hours, Amanda may be spotted at any of the Twin Cities salsa dance hot spots or at a local studio where she is a Salsa dance instructor. Discovering the many sinfully delicious yet mysteriously underrated restaurants around the Twin Cities is a goal she strives after with great zeal, and, it is not uncommon to find her at a café with a friend over analyzing global injustices or a foreign film. She has a weakness for mint chocolate chip milk shakes, gets ridiculously excited about her favorite novel, The Count of Monte Cristo and never passes up the opportunity to spend quality time with an old friend, or make a new one for that matter!

Women's and adolescents' wellness in addition to cancer awareness are on the top of her list. She loves her family, cuddly animals, children, Latin music, and the color red. She's not so much a fan of getting up early or loud food chewers and she sincerely hates the cold. One of the most frightening moments of her life was when she was approached on the street in Venezuela by an angry vulgarity screaming woman who gave her a sturdy clout with an umbrella for no apparent reason.
