This specific offering comes from the COCCAL cooperative, located in San Juan Intibucá, Honduras. Four producers contributed to this offering, all members of whom are members of COCCAL. San Juan Intibucá is located in West Honduras, where the mountains divide the Atlantic and the Pacific, a micro-climate that makes the difference in the coffee's production as the influence of the Pacific climate prevails. This area in is now recognized for producing many Cup of Excellence coffees. The coffee, at the time of harvest, has a ripening that can lastfor up to forty-five days in its mature state without suffering any deterioration. Coffee grown under shade, traditionally processed, then dried on patios.
