Strictly High Grown EP - Rancho Bonito
Rancho Bonito is a 35 hectare farm in the Sierra Madre Mountains of Chiapas owned by Don Martiniano and his brothers. They have been in coffee since they were teenagers as their father was a farmer before them. They are tending traditional varietals of Bourbon, Typica and some Catuai. They pick ripe cherries, pulp with little water, use a demucilage machine to remove the mucilage and sugar and then dry the Pergamino on a patio in the fresh mountain air and sun.
