Elcias Munoz has produced some of the best coffee we have ever seen come out of Colombia. He was one of the first producers to win our 90+ Program and recieved a round-trip ticket to the SCAA the following year, being able to meet the roaster than purchased his coffee. Elcias has been producing coffee for more than 25 year now and lives with his wife Elci and their four children on their farm just outside of Timaná. He has been developing his process for years and as of late, has discovered a link between quality and the age of his trees.

Elcias collects ripe beans only every 15 days during the harvest, processing them the same day through his traditional 5-outlet pulper. The coffee is then dry-fermented for 26 hours, washed three to five times, then placed in a parabolic dryer for an average of 10-15 days.
