Iván has spent much of his life in coffee, working across different parts of the industry and learning from multiple producing countries before building a family project of his own. Since 2018, Café Solís y Cordero has grown into a micromill focused on quality, sustainability, and coffees that stand apart.
Iván’s approach is rooted in experience but pointed toward the future. The mill emphasizes natural and honey processes, slow drying, low water use, solar energy, and the use of coffee husk as biomass for mechanical drying. But beyond the technical pieces, this story is about purpose: creating high-value coffees, building a path for the next generation, and believing there is still so much ahead for coffee.
