Young multigenerational coffee producer Elkin Guzman has always been interested in and drawn to applied science, and his approach to coffee is no different: He is inspired by methodical research and experimentation, and is something of a data nerd, especially when it comes to unlocking the secrets to top quality coffee. After watching a video presentation by Brazilian agro-engineer Dr. Flávio Borém, Elkin decided to pursue processing experiments on his family farm in Pitalito, Colombia.

One of the most out-there of his techniques is a multistep process we have dubbed Natural-Hydro-Honey: The coffee is picked at peak ripeness, dried as a Natural, then rehydrated, depulped, and processed as a Honey. If it sounds weird, that’s because it is—but the flavor is out of this world. Tropical and juicy, with dried-fruit sweetness and complex notes of different fruit and berries, the profile is as unique as the process itself.
