The Unión de Ejidos "Profesor Otilio Montaño" is an organization started in 1989 and legally unionized in 1993 as a group of growers producing shade-grown coffee in a high-altitude region of Chiapas, with an emphasis on sustainable agriculture, quality, and access to education for themselves and nutritional inputs for their plants. The organization has 650 coffee-producing members and 50 members who are beekeepers. There are about 70 communities represented in the organization, covering five municipalities.
This coffee is decaffeinated using the Mountain Water Process, which naturally eliminates more than 99% of the caffeine from the green beans.
