Olivia Lee

Sensory Analysis Assistant

Olivia is the Sensory Analyst at Cafe Imports Australia. Based in the office from Monday to Friday, she handles the daily work in the sensory lab, including green bean grading, sample roasting, cupping, and sending coffee samples to customers.

Originally from South Korea, Olivia began her career in the film industry, making background music. However, after a chance encounter with specialty coffee, she couldn't get it out of her mind. Her focus completely shifted to coffee, which eventually led her to study it seriously. While studying, she heard about Australia's unique coffee culture and how different it was from Korea. She really wanted to experience this culture, so she made the big decision to move to Melbourne in 2018, originally planning to stay for just one year.

After moving, she put a lot of effort into improving her English, adapting to the new culture, and immersing herself in the local coffee community. Working across various roles as a barista, roaster, and cupper, she gained a broad and deep perspective on the Australian coffee industry. Beyond coffee, she also fell in love with the local lifestyle, beautiful weather, nature, and wildlife like koalas and kangaroos, making Australia her permanent home.

Outside of work, Olivia has a variety of hobbies. She makes her own clothes and bags using a sewing machine, and enjoys taking care of plants at home. In the office, she is also growing baby coffee trees that she germinated from seeds. When the weather is nice, she likes going for a run or exploring new cafes and restaurants around Melbourne.
